In Chicago, Zubair Mohajir and Jacob Dela Cruz Cook Three Regions Over One Fire
Chicago has a new restaurant built around live fire. Muhājir, from chefs Zubair Mohajir and Jacob Dela Cruz, opened over the summer with a menu that ranges across Europe, the Middle East and Southeast Asia, all of it cooked over open flame. The thread joining those regions is the old spice trade, the long-distance commerce that once carried flavor from one coast to the next. Here it becomes the organizing idea for a single dining room on the shore of Lake Michigan. It is an ambitious brief for a new opening: two chefs, three broad culinary regions and one heat source holding it together. We have not yet sat down at Muhājir, so we will leave the verdict for another day. For now, Chicago has a fresh address worth putting on the list.
