Forget the syrupy version tourists order in Miami—the bar carts from Palm Beach to Naples are pouring a mai tai built for people who actually like rum. The new formula trades the usual sugar bomb for real depth, and it's about time somebody in Florida admitted that "tropical" doesn't have to mean "toothache."
