American Cabernet Franc Is Having a Moment, and Restaurant Wine Lists Are Taking Notice

A varietal once treated as a supporting player in American winemaking is stepping into the spotlight on its own terms. Vintners around the country are turning out Cabernet Francs confident enough to headline a list rather than round one out, and a new survey singles out seven bottles worth seeking by name. For a dining room building a wine program, it is a useful reminder that some of the most interesting pours on the market right now are homegrown.
