A Gin Measured in Nights Arrives at the Bar
Seventy One Gin has released its second bottling, Eau De Minuit, and it is the house's first addition to the shelf since the brand launched. What sets it apart is time, counted the way a distiller counts it: seventy-one nights of rest in wood, with the spirit passing through three distinct barrel types along the way. Few gins see the inside of a cask at all, and fewer still pick up color and depth from more than one. For the sommeliers and bar directors who build the drinks lists in our dining rooms, that makes this a bottle worth asking the distributor about. Expect it to show up first where the back bar is treated with the same seriousness as the wine cellar.
